These small loaves are a miniature version of our traditional pâté en croûte loaf.  Perfect for bite-sized snacking and fancy party treats.  The mini-loaf is  12" long and 1.5" wide and 2" high, and yields around 24 slices.  Each loaf is approximately 1.3 lbs.

Mini Pâté en Croûte de Chevreuil:  Venison, pork, liver, quince, pumpkin seed, Macvin, Grand Marnier, confit garlic, spices

Mini Pâté en Croûte de Canard de Boudin: Duck, pork, boudin, Pommeau, pistachio, tarragon, chervil, warm spices

Mini Pâté en Croûte de Trois Volailles au Poire et Matsutake: Chicken, duck breast, duck liver, Guinea hen, pear, matsutake, vin jaune
