Keeping it in the family and we like it. This family's estate produces some of the finest Blanc de Blancs available today. Emmanuel Lassaigne, Jacques’s son, has been working with the vines since 1999, and now he’s the one calling the shots. This particular wine is a vibrant expression of 100% Chardonnay, with aromas of green apple and pastry—what’s not to love? On the palate, it delivers brightness, a burst of acidity, and a touch of minerality (that’s the soil speaking to you!). As always, we love Champagne for any occasion, but if you’re saving this one, we recommend pairing it with oysters, light hors d'oeuvres, or sushi.
